The terroir down under

Australia’s oldest distillery is Beenleigh Artisan Distillery, founded in 1884. It is home to “The Old Copper” no-retort pot still, an unusual shape and style known as a vat still, and the only one of its kind in Australia. Long fermentations with rare yeasts add to Australian rums’ exotic appeal.

Testing profile

Australian rums can evoke stone fruits like peach and apricot on the nose, followed by cooked fruits and bright touches of citrus and cacao on the palate. Exotic fruits and notes of vanilla emerge on the finish.
